Cleaning Commercial Kitchen Equipment: A Hygiene and Safety Guide

The grill in a busy pub kitchen throws off enough grease in a single Friday service to coat every surface within a metre of it. Kitchen equipment is where commercial cleaning stops being about appearances and starts being about whether your business passes its next Environmental Health inspection. Why kitchen equipment cleaning is a category of its own

Office cleaning is largely about dust, floors and touchpoints. A commercial kitchen is a different animal entirely. You have carbonised grease baked onto steel at 200 degrees, protein residue on slicers that feeds bacteria, limescale choking dishwasher jets, and grease travelling up through canopy filters into ducting where it becomes genuine fire load. Each of those needs a different chemistry and a different technique, and none of them respond to a generic all-purpose spray.

The regulatory backdrop matters too. Under the Food Safety Act 1990 and the Food Hygiene (England) Regulations 2013, food businesses must keep equipment clean and in good order. Environmental Health Officers assess this directly during the inspection that produces your Food Hygiene Rating, the 0-to-5 score displayed on the sticker by your door. Cleanliness of equipment is one of the three pillars they score, alongside food handling and management. A slicer with residue in the blade guard or a fridge seal furred with mould will pull that number down fast, and in a town where diners check the rating before they book, that is lost revenue.

There is also the fire dimension, which people forget. Grease-laden extraction systems are one of the most common causes of commercial kitchen fires. Insurers increasingly require documented ductwork cleaning to a recognised standard, and if a claim follows a fire, the first thing a loss adjuster asks for is your cleaning records. Ovens, ranges and combi units

Cooking equipment carries the heaviest soiling in any kitchen, and it is almost always carbonised, which means burnt-on carbon that a degreaser alone will not shift. We work these in stages. First the loose debris comes out, then a caustic-based oven degreaser goes on and is given real dwell time, usually 15 to 20 minutes, because the chemistry needs to soften the carbon rather than be wiped off before it has done anything. Rushing the dwell is the single most common mistake we see from in-house teams.

Combi ovens are their own puzzle. Most modern combis have a self-clean cycle, and operators often assume that is enough. It handles the cooking chamber, but it does nothing for the door seal, the gasket channel where fat collects, the fan cover, or the drip tray runners. We strip those by hand. On a range, the burners come off, the flame ports get cleared with a fine tool so they burn evenly, and the splashbacks behind get degreased because that is where a surprising amount of grease lands and hardens.

Salamanders and grills are worse still because the heat is so direct. The bars carbonise, the collection tray fills, and if nobody clears the tray it starts smoking through service. We soak grill bars in a caustic bath, scrape the tray, and check that the reflector plates behind the elements are clean, because a greasy reflector is a fire waiting to happen.

Extraction canopies, filters and ductwork

If we could get every kitchen operator to take one thing seriously, it would be the extraction system. Grease is drawn up off the cooking line, caught partially by the baffle filters, and the rest travels into the canopy plenum and up the ductwork. Left alone, it accumulates into a continuous flammable coating along the entire run.

The filters are the easy part and should be pulled and degreased weekly by kitchen staff. Stainless baffle filters go through a soak tank or a dishwasher on a hot cycle. The canopy interior, the plenum behind the filters, and the fan need periodic deep cleaning that goes beyond what a nightly team can do. Ductwork is the specialist job: access panels come off, and we clean the internal surfaces along the whole run to a measured standard, recording grease-depth readings before and after so there is a paper trail. TR19 Grease is the industry benchmark most insurers reference, and cleaning frequency depends on how heavily the kitchen is used, from quarterly for a hard-frying operation to annually for light use.

We have opened ducting on jobs where nobody had ever cleaned it and found deposits you could dig into. That building was one dropped pan of hot oil away from a serious fire, and the operator had no idea because the problem was hidden inside the metalwork above the ceiling line.

Refrigeration, cold rooms and prep equipment

Cold equipment fails hygiene inspections for different reasons than hot equipment. Here the enemies are mould, spillage residue and neglected seals. Door gaskets on fridges and walk-in cold rooms are made of ribbed rubber that traps moisture and organic matter, and they grow mould in the folds if they are not cleaned into properly. We pull the seal open and clean each rib, because a quick wipe across the front does nothing.

Condenser coils are the hidden one. When they clog with dust and grease the unit works harder, runs warmer, and eventually cannot hold temperature, which is both an energy cost and a food safety failure if the fridge drifts above 8 degrees. We clean coils and check drip trays and drain lines, which block and overflow into the cabinet base if ignored.

Prep equipment is where cross-contamination lives. Meat slicers are the classic risk. The blade looks clean but the guard, the carriage and the area behind the blade collect residue that feeds listeria and other pathogens. Slicers must be fully dismantled to clean, not wiped assembled. Food processors, mixers with their attachments, vacuum packers and mandolines all have the same trap: the working part looks fine while the housing and joints hold residue. Dishwashers, sinks and water-fed equipment

The machine that cleans everything else needs cleaning too, and it is almost always limescale that does the damage in hard-water areas like much of Gloucestershire. Scale builds on the wash and rinse jets until the spray pattern breaks up and plates come out dirty. We descale the jets, clear the wash arms, empty and scrub the sump, and check the rinse-aid and detergent dosing because an underdosing machine gives the illusion of cleaning without actually sanitising.

Rinse temperature is the quiet hygiene point here. A commercial dishwasher should hit around 82 to 88 degrees on the final rinse, because that heat is what actually sanitises the crockery. If the machine is scaled up and struggling to reach temperature, everything coming out of it is questionable no matter how clean it looks. Sinks, taps, wash-hand basins and their surrounding splashbacks round out the water-fed equipment, and the wash-hand basin specifically gets scrutiny at inspection because handwashing is central to food safety.

Building a cleaning schedule that actually holds

Equipment cleaning only works when it is split by frequency and someone owns each task. The daily jobs belong to the kitchen team: wipe-downs after service, filters pulled and soaked, surfaces sanitised, fridges spot-cleaned. The weekly and monthly jobs are the ones that slip, and that is where a professional visit earns its place, handling oven strip-downs, coil cleaning, slicer dismantling and the canopy interior. Then there are the periodic specialist jobs, principally ductwork, on a schedule set by usage.

The key is documentation. A cleaning schedule pinned to the wall with dates and initials is both a management tool and your evidence at inspection. When an EHO asks how you know the extraction system is clean, "here is the dated record and the grease readings" is a very different conversation from a shrug.
